Hermann's tortoises are strict herbivores that evolved on the scrubby, sun-baked hillsides of southern Europe, where the available plants are tough, fibrous, and relatively low in calories. Their long digestive tract is built to extract nutrition from large volumes of high-fiber vegetation eaten slowly across the day. A healthy diet mirrors that reality: high in fiber, high in calcium, low in protein, and low in sugar and fat. Most diet-related problems in captive tortoises trace back to food that is too rich rather than food that is too sparse.
Calcium is the single most important mineral for a growing or breeding tortoise, and the ratio of calcium to phosphorus matters as much as the absolute amount. A target ratio of roughly two parts calcium to one part phosphorus supports proper shell growth and bone density. Diets weighted toward grocery-store greens and fruit tend to invert that ratio, contributing to soft shell, pyramiding, and metabolic bone disease over time.
Protein is the other variable that gets tortoises into trouble. Excess dietary protein drives fast, uneven shell growth and places a heavy load on the kidneys, which is especially risky for an animal that may live more than half a century. Legumes, grains, and any animal-based food push protein too high and have no place in a staple diet.
Hydration comes from a combination of moisture in fresh plants, a shallow water dish, and regular soaks. Even though Hermann's tortoises are adapted to dry conditions, they are not desert animals, and chronic mild dehydration stresses the kidneys and bladder. Pairing a fiber-rich diet with consistent access to water keeps digestion and waste elimination working as they should.
