The toxicity of xylitol in cats stems from its powerful effect on insulin release from the pancreas. Unlike glucose, which triggers a proportional insulin response, xylitol causes a massive and sustained insulin release that rapidly drops blood sugar to dangerously low levels. This hypoglycemia can cause weakness, collapse, seizures, and death within hours of ingestion. Additionally, in some animals, xylitol causes acute liver failure through mechanisms not fully understood, potentially leading to bleeding disorders and death even after hypoglycemia is controlled. The dual threat of hypoglycemia and hepatotoxicity makes xylitol an especially dangerous toxin.
