For most small cattle operations in most of North America, hay is not optional. It is the foundation of the winter feeding program, and what you know about buying, evaluating, and feeding it has a direct effect on your cattle's health, your herd's productivity, and your bottom line.
Hay is also where a lot of small cattle operators spend money less efficiently than they could. Buying hay at emergency prices in February because you did not buy enough in summer. Feeding hay that is too poor in quality to meet your cattle's nutritional needs, then wondering why your cows are losing condition. Storing hay without cover and losing a significant percentage to weather damage. These are all problems that experience and planning solve, and they are worth getting ahead of.
The world of hay can feel complicated when you are starting out - there are different species, different quality grades, different cutting times, different storage forms from small squares to large rounds to big square bales - and knowing what you are looking at when you are buying matters because hay quality varies enormously and the price per ton does not always reflect nutritional value. This guide will walk you through the practical knowledge you need to buy good hay, evaluate it before you pay for it, store it without significant waste, and feed it in a way that makes the most of what you bought. By the end of it you will have enough of a foundation to buy hay with some confidence and feed it intelligently.
Section 2 Essential Requirements
The first requirement for a sound hay program is knowing roughly how much you need before buying season arrives. A 1,000-pound dry cow eating hay through winter needs about 25 pounds per day. Over a five-month winter, that is 3,750 pounds of hay per cow - call it two tons per cow for a shorter winter, closer to two-and-a-half tons for a long cold one. Add 20 to 30 percent buffer for weather extending the feeding season, wastage at the feeder, and cows with higher nutritional needs like late-gestating and lactating cows who eat more. If you have five cows and you feed hay for five months, you need roughly 10 to 12 tons of hay minimum. Know your number and buy it before you need it.
Hay quality matters enormously and the key indicators are ones you can assess before you ever get a laboratory analysis. Start with color - good hay should be green, not yellow, beige, or bleached white. Color indicates chlorophyll content and correlates strongly with vitamin and mineral retention. A bale that is brown on the outside can still be green inside if it was stored without moisture intrusion, but a bale that is uniformly beige throughout has lost significant nutritional value through weathering or poor curing. Smell is your next indicator - good hay smells clean, slightly sweet, and grassy. Musty, dusty, fermented, or moldy smells indicate moisture problems during curing or storage that have compromised both quality and palatability. Cattle will sometimes refuse hay that smells off, and moldy hay can cause digestive and health problems.
Leafiness is the third quick indicator of quality. Leaves contain significantly more protein and digestibility than stems, so a leafy, fine-stemmed hay is nutritionally superior to a coarse, stemmy one of the same species. When you open a bale or break into a large round, look at the ratio of leaves to stems. Hay that was cut at the right time - before the plant goes fully to seed - retains more leaf and less stem. Hay that was left standing too long before cutting is stemmy, lower in protein, and less digestible.
Hay testing is the most reliable way to know exactly what you are buying and what it will do for your cattle. A standard hay test costs $20 to $40 per sample and gives you crude protein, total digestible nutrients, relative feed value, and key mineral levels. For most small operations buying hay from a consistent source they trust, visual assessment is sufficient most years. But if you are buying a large quantity from an unfamiliar source, or if your hay looks borderline in quality, a test before you buy a full season's worth is money very well spent. Your local extension service or a commercial forage testing lab can do this quickly.
Small square bales are the traditional choice and remain popular for small operations because they are easy to handle by hand, easy to feed in measured amounts, and easy to store in a standard barn. A small square bale weighs 40 to 70 pounds depending on how tight it was baled and the moisture content. The trade-off is that small squares cost significantly more per ton than large rounds, both because of the extra labor in baling and because the hay market prices them at a premium for convenience. For a small herd where you are feeding a few bales a day, the handling convenience often justifies the price difference.
Large round bales are the economical choice for operations with the equipment to handle them. A standard large round bale weighs 800 to 1,500 pounds, and the price per ton is usually significantly lower than small squares. You need a tractor with a front-end loader or a spear attachment to move them, and you need a hay ring feeder to prevent cattle from trampling and wasting the hay as they eat. Wastage with large rounds fed without a ring can run 20 to 40 percent of the bale, which quickly erodes the per-ton price advantage. Feed large rounds in rings and move the ring to a new spot every few weeks to prevent mud and manure buildup.
Section 3 Daily Care And Management
Day-to-day hay feeding comes down to consistency and observation. Feed at the same time every day. Put out enough that cattle have access through the day without significant competition, but not so much that large amounts are being wasted or contaminated with manure. For small square bales, a good starting point is one bale per two cows per day for moderate-quality hay, adjusting based on how much is left when you feed again the next morning. If there is always a significant amount left, back off slightly. If bales are completely cleaned up and cattle are looking for more, increase.
Watch for waste. Hay that falls out of feeders and gets trampled into bedding or manure is money on the ground. A hay ring for large rounds and a well-designed hay feeder rack for small squares significantly reduce this waste. The initial cost of proper feeding equipment pays for itself quickly in reduced hay losses. Move feeding areas periodically to prevent the ground from becoming a muddy, manure-contaminated mess, which causes cattle to refuse hay that falls in it.
Hay storage protects your investment. A hay bale left in the field or stacked outside without a tarp on the top loses significant dry matter from the outside in - the outer six to eight inches of a large round bale can be completely weathered and unusable. Covered storage - a hay barn, a simple pole building with a roof, or at minimum quality tarps laid over the top of the stack - dramatically reduces storage losses. Stack small squares off the ground on pallets or rails to prevent moisture wicking up from the soil. Store large rounds on a well-drained surface in a row with the flat ends together to minimize the surface area exposed to rain.
Section 4 Health Considerations
Moldy hay is one of the sneakier health risks in a cattle feeding program, because cattle will sometimes eat mildly moldy hay without obvious signs of refusal, and the effects - reduced intake, digestive upset, suppressed immune function - can look like a lot of other things. The molds that grow in improperly cured or wet-stored hay produce mycotoxins, which are genuinely harmful even in small amounts over time. If a hay bale smells musty or shows visible mold when you break into it, do not feed it to cattle. The risk is not worth the hay's value. This is also why hay moisture at baling matters so much - hay that is baled too wet heats significantly, which destroys nutrients, can cause spontaneous combustion in a barn, and creates ideal conditions for mold growth.
Dusty hay is hard on the respiratory system, particularly in cattle already under any respiratory stress. When you break open an old, dry bale and a cloud of dust comes out, what you are seeing is a combination of soil particles, broken plant fragments, and fungal spores. Feeding consistently dusty hay to cattle in a confined area contributes to respiratory irritation over time. Wet the hay slightly before feeding it to very dusty older bales, or better yet, identify dusty bales early and use them for bedding rather than feed.
Corn stalks and certain other crop residues that get baled with hay can cause hardware disease - cattle inadvertently swallowing wire, nails, or other metal fragments in the field when they graze crop residues or when bales are contaminated. Hay from well-managed grass fields is low risk for this, but crop field bales deserve more scrutiny. This is not a common problem but it is a real one, and knowing the source and history of your hay matters.
Nutritional deficiencies tied to hay quality show up over weeks and months rather than overnight. Cattle on poor hay through a long winter may arrive at spring looking thin and rough-coated, cycling irregularly, and with a higher susceptibility to illness. A hay test done in October before you commit to your winter supply gives you the information to know whether you need to supplement protein, energy, or minerals to make a marginal hay work adequately through the cold months. A little planning in fall prevents a lot of catching up in spring.
Section 5 Breed Considerations
Hay quality requirements differ meaningfully between cattle in different production stages and between different types of operations, and breed is one part of that picture. Larger-framed Continental breeds and their crosses need more total dry matter than smaller British breeds to maintain condition, which translates directly to more hay through winter. A Simmental-cross cow wintering in good condition may need 30 pounds of hay per day while a smaller Angus cow doing the same might be adequately maintained on 22 to 25 pounds. This matters when you are calculating your seasonal hay needs.
High-producing dairy cows have hay quality requirements that exceed what most beef operations need to source. A Jersey or Holstein in peak lactation needs hay that tests at 16 to 18 percent protein and high digestibility to fuel milk production without excessively losing body condition. Grass hays that work perfectly well for a dry beef cow may be genuinely inadequate for a dairy cow in full production, and sourcing high-quality mixed grass-legume or alfalfa hay for the lactating portion of a dairy herd is a real nutritional necessity rather than a preference.
Miniature breeds are easy on hay simply because of their lower body weight - a miniature Hereford cow needs maybe 15 pounds of hay per day rather than 25, which changes the arithmetic on seasonal hay purchases significantly. If you are running miniatures on a small acreage where the economics of hay purchase per animal matter a lot, the lower hay consumption per animal is one of the genuine practical advantages of smaller breeds.
Mature cows of any breed are more efficient on lower-quality hay than growing animals or high-production animals. A mature, dry cow in good condition can maintain herself through winter on hay that would be inadequate for a yearling heifer still growing, or for a cow nursing a calf. This is useful knowledge for managing a mixed herd - your best hay should go to your highest-need animals, and your more mature, easy-keeping stock can do well on the hay that is good but not exceptional.
Section 6 Common Mistakes To Avoid
The most expensive hay mistake, repeated by people every single year, is not buying enough hay before winter and being forced to buy at emergency prices in January or February when hay is scarce and sellers know it. Summer hay prices reflect the cost of production and a competitive market with plenty of supply. Winter hay prices in a cold region can be double or more than summer prices, and in drought years across multiple states the situation can be dramatically worse. Calculate your seasonal need in September, add your buffer, and buy your hay by October. If you have covered storage, buy even more than you need as insurance. A year with leftover hay is a year where next season's prices did not hurt you.
Feeding hay without a proper ring or feeder rack causes hay waste that is genuinely shocking to people who have not seen it measured. Studies on large round bales fed without rings consistently show 25 to 40 percent wastage from trampling, contamination, and cattle lying in the hay. A $150 hay ring saves more than its cost in the first season on a medium-sized herd. Square bale waste from loose feeding on the ground is comparable. Every dollar lost to hay waste is a dollar you already spent and got nothing from.
Ignoring hay quality and treating all hay as equivalent nutritionally is a mistake that leads to cattle that look fine in October and are noticeably thin by February despite eating the same amount of hay all winter. A cow that is consuming 25 pounds per day of hay testing at 12 percent protein is meeting her needs. The same cow consuming 25 pounds per day of hay testing at 7 percent protein is slowly running a nutritional deficit. The bales look similar. The cattle look similar for weeks. But the outcome over a full winter is not the same, and it shows up as thin cows, poor reproductive performance, and calves that are not as vigorous as they should be. Know what your hay tests, or at least buy from a source where you can evaluate quality visually and make an honest assessment.
Waiting too long to start feeding supplemental hay when pasture quality declines is a common error in the transition from grazing season to hay feeding. The temptation is to stretch the grazing season as long as possible because hay costs money and grass is free. But cattle grazing a pasture that is genuinely depleted are not maintaining condition - they are slowly losing it. Body condition lost in the fall before winter even arrives is much harder to recover once you are feeding hay in cold weather. Start supplementing hay when pasture quality declines below what cattle need to maintain condition, even if the grass still looks green from a distance. Walk the pasture and evaluate what is actually there.
Storing hay without cover in a wet climate is essentially burning money slowly. A large round bale stored outside without shelter will lose between 10 and 35 percent of its dry matter over a full winter depending on rainfall, the bale density, and whether it is in contact with the ground. Over a full season's hay supply for a small herd, that waste adds up to a number that would have built a simple pole barn roof. Even a well-designed tarp arrangement over properly stacked rounds reduces weather losses dramatically. The logic of protecting your single largest annual feed purchase with appropriate storage infrastructure is hard to argue with when you do the math on what outdoor storage losses actually cost you over a few seasons.
